Takoyaki is the name of food from the Kansai region in Japan, shaped in small balls with a diameter of 3-5 cm made from flour dough filled with octopus pieces in it.

150 grams of flour
2 chicken eggs
200 ml of liquid chicken broth
1/2 teaspoon baking powder
Salt, water and cooking oil to taste
100 grams of squid, octopus or tuna (first steamed then sliced into small pieces)
Cauliflower, finely sliced
1 leek, finely chopped
Takoyaki sauce, mayonnaise, chili sauce or tomato sauce to complement
How to make :
Mix enough flour, chicken eggs, baking powder and salt. Mix well then pour the chicken stock little by little until the mixture is runny.
For stuffing, stir-fry squid, cauliflower, leeks, and powdered stock until fragrant.
Heat the mold, add oil, then pour the takoyaki mixture until half of the depth of the mold hole, add enough filling and pour the mixture again until the mold hole is full.
Cook the takoyaki until the bottom is cooked and the top is fluffy. Flip the takoyaki carefully until the shape is round.
Once cooked, remove from heat and serve with takoyaki sauce, mayonnaise, and chili or tomato sauce.
